《Fresh eggs are like lights that light up our lives》, illustrated by Dawnxisoul393

Eggs are one of the most common foods on our tables and are rich in protein, fat, vitamins, and minerals. The protein has a repairing effect on liver tissue damage and the lecithin in the yolk promotes the regeneration of liver cells. The lecithin, triglycerides, cholesterol, and lecithin in eggs have a great effect on the development of the nervous system and the body, educating and strengthening the brain and improving memory. But how do you buy fresh eggs and store them properly? Firstly, there are several tests for egg freshness that we have summarised in life.

(1) Light identification, the light identification method is based on the egg itself has the characteristics of light transmission, under the light perspective to observe the internal structure of the egg and the characteristics of the composition changes, to identify the quality of the egg, we can use light to identify the quality of the egg fresh Chen advantages and disadvantages, one of the simplest methods of light identification method is to open our mobile phone torch function, put the egg to the light, fresh eggs in the light perspective, the egg white Completely transparent and pale orange-red in color, with a very small, slightly dark, non-moving gas chamber, thick and clear egg white, free of impurities, with the yolk in the middle and a tightly wrapped yolk membrane, showing a hazy dark shadow.

2) Sound test method, hold the egg between your index finger and thumb and place it in your ear and shake it gently a few times. If the egg is fresh, the air chamber and yolk are intact and there is usually no sound or just a slight shaking sound, but if you hear a clear "running sound" in the egg, it means that the egg has been in place for a long time or that the egg has changed internally, the yolk has broken off and the space inside the egg has become larger. The yolk has broken off and the space inside the egg has become larger, so when the egg is shaken, it will make a sound.

(3) Touch and feel method, is the most convenient way to select eggs, we use our hands to feel the shell of the egg, the shell of a fresh egg is very complete, no cracks and the surface of the egg has a layer of white "eggshell cream", feel with your hands is very rough feeling, such eggs are fresh good eggs, old eggs after Older eggs have been in contact with the box for a long time and the surface of the shell becomes smooth and shiny, so "high value" eggs are not necessarily fresh.

These three methods are all tips for selecting eggs, and as long as we are careful enough when selecting eggs or using them together, we can be sure that the eggs we pick are all fresh.

So how do we test the freshness of eggs that have been stored at home for some time? Use a bowl, fill it with water and place the egg in it. If the egg is tilted in the water, even vertically, it has aged but not deteriorated, if the egg is horizontal and sinks to the bottom, it is still fresh, if it floats on the surface, it has deteriorated. This is because when micro-organisms enter the egg itself or pass through the shell, the micro-organisms multiply and consume the egg's nutrients, water and metabolic gases expelled from the shell, making the overall density of the egg lighter and the egg floats.

Finally, where should we store our eggs? Eggs can be placed in the freezer of the refrigerator, but be careful not to place them next to the innermost evaporator as this can cause frostbite. When placing eggs, it is best to place them with the smaller end facing down and the larger end facing up. The larger end has a chamber with gas in it, so when the larger end is facing up, the yolk is inhibited from moving towards the shell, which will give the eggs a longer shelf life. Although refrigerated eggs can be stored for a longer period of time, it is best to consume them within 45 days as after a long period of time they will lose moisture and nutrients, so if stored for too long they will no longer be fresh.
